If you want to make omelettes, scrambled eggs, or French toast, these cannot be beat. Each package contains a dozen eggs. When you open the package you have a yellow powder. Measure out what you want and add water. Mix like you would scrambled eggs. I added some rehydrated red, yellow and green bell peppers. Cook them like you would normal scrambled eggs or an omelette. You can add cinnamon and vanilla for French toast, or they make a French toast mix. They look and taste exactly like fresh scrambled eggs. I would never consider bringing fresh eggs (bulky) or freeze dried scrambled eggs (nasty) again. These are perfect.

There are several older threads that mention these but I was so impressed that I wanted to refresh the topic.

The only thing I noticed, is this is a real egg product. I think they have had at least one small recall in the past. So you want to cook them well I think.

We bring them every trip--scrambled eggs with veggies and bacon bits. The best!

How are these for baking? Maybe need to do side by side at home to test.
