How's the new grill going? Tonight we are grilling pork chops and making pineapple salsa. Have you ever grilled pineapple?


Just today I got around to making my first gazpacho of the summer.

My wife cooked this recipe a couple of days ago and it was really good. Even she loved it and she's not a big salmon lover!

2 (6 oz.) salmon fillets, 1" thick
cooking spray (or oil)

2 TBSP lime juice
1/2 tsp salt
1/2 tsp ground ginger
1/2 tsp ground coriander
1/4 tsp ground cumin
1/8 tsp ground cinnamon
1/8 tsp ground red pepper

2/3 cup plain fat free yogurt
2 TBSP chopped fresh cilantro

Preheat oven to 425 degrees.

Place salmon skin side down in roasting pan coated with spray. Brush with lime juice, combine the salt and spices. Sprinkle evenly over fish.

Roast for 10 minutes or until desired degree of doneness. Combine yogurt and cilantro and serve with fish.

Note: We did not have cilantro, but made a raita with the yogurt and cucumber to go with it. Also served with rice and peas.

This was very good salmon!

Let me know what you think. I think it's very good - one of the best new recipes we've tried in a while.

Ginger and salmon go great together as it is, but add the rest of that and it looks like something we have to try. Thanks for sharing it.
