I was just talking to my wife this afternoon about it being time for a big batch of chili, as THE Chicago Bears just started training camp, and their first real game of the season is against the Packers in early September.

I'll miss watching it, as I will be on a 2-week BWCA solo. I/we usually have chili on game days, especially when it is cold out. This is the Bears year to get into the Super Bowl. You heard it right here!

Give us a chili recipe or two. Thanks.

My basic rule of thumb for chili is this:

For every pound of ground beef I include;
1 packet chili seasoning
1 can of diced tomatoes- I like fire roasted with garlic. If you like a little heat, try Rotel with green chilies.
1 can of beans - I use both chili beans and dark red kidney beans with big batches
1 can of mushrooms - you either love them or you hate them!
Diced red onion - included during the browning of the meat. I like a lot of onion.
Fresh, diced jalapeños. Two or three; again depending on the batch size.

This produces a thick chili. Sometimes I thin it out with a can or two of tomato sauce. Just depends on how I feel that day.

I have cooked this in a roaster all day, and I have also made it on the stove in 30 minutes. One of the best leftover meals ever…

Amarillo - Looks and sounds good! I'm thinking that a Packer version instead of a Bear version would not be as tasty.
