Easy and yummy summertime grill favorite at our place is pork souvlaki kabobs. Recipe as follows:

3 Tbs white wine
3 Tbs evoo
3 Tbs fresh squeezed lemon juice
1 Tbs fresh chopped oregano
2-3 cloves garlic, chopped
1 packed tsp lemon rind
1 tsp salt
1/2 tsp fresh ground pepper

Mix all the above ingredients in a nonreactive container

1-1.5 lbs pork tenderloin (not pork loin!) cubed into 1.5 inch squares
1-2 onions cut into 1.5 inch squares
1-2 red bell peppers cut into 1.5 inch squares

Marinate the pork in the mixture 1-2 hours

Thread pork, onion and peppers onto skewers and grill directly over high heat 3-4 minutes per side until internal temp of the pork hits about 140. Yummy!!!
