Cut tempeh into 1/4-inch wide strips and brown in skillet, remove. Saute onion, garlic, red pepper strips, peanuts, and bok choy. Return to pan and add soy sauce and sriracha sauce to taste. Serve with or without rice. You can also substitute napa cabbage or regular cabbage, or even kale or chard.
