Pineapples were on sale at a good price, so my wife and I bought one. Last night I reminded myself how good roasted pineapple is. I combined chicken thighs, chunks of pineapple, green pepper, onion, crushed red pepper, and olive oil and roasted in the oven. Served over quinoa. It was quite tasty.

If you've never roasted pineapple, give it a try.

Speaking of a Fibonacci sequence. : ) Fresh pineapples are one fruit that intimidate me.

I like how that meal looks so flavor balanced. I might have to stop at the deli to get some already peeled and cored to do something similar. I’m getting a lot of ripe (red) jalapenos now. It could be a feast for the eyes by using a ripe orange Bell Pepper along with a green one too.

pineapples are great!


Just throw one of those jalapenos in there, inspector, with whatever else you've got - that's what I did. I'd have used a pepper instead of the crushed red pepper if I'd had it. Probably would be good with red onion as well as the white one I used. btw, grilled pineapple is good and makes a good pineapple salsa too.

Works well with shrimp and red onion and garlic too!

Spice for pineapple.
2-3 TBS Garam Masala
salt to taste
chili powder to taste
This is really amazing on fresh pineapple.
