If you've never roasted pineapple, give it a try. |

Speaking of a Fibonacci sequence. : ) Fresh pineapples are one fruit that intimidate me. I like how that meal looks so flavor balanced. I might have to stop at the deli to get some already peeled and cored to do something similar. I’m getting a lot of ripe (red) jalapenos now. It could be a feast for the eyes by using a ripe orange Bell Pepper along with a green one too. |

pineapples are great! Just throw one of those jalapenos in there, inspector, with whatever else you've got - that's what I did. I'd have used a pepper instead of the crushed red pepper if I'd had it. Probably would be good with red onion as well as the white one I used. btw, grilled pineapple is good and makes a good pineapple salsa too. |

2-3 TBS Garam Masala salt to taste chili powder to taste This is really amazing on fresh pineapple. It comes from the cookbook "Where Flavor Was Born Recipes and Culinary Travels Along the Indian Ocean Spice Route" by Andreas Viestad It's an interesting read and has beautiful pictures as well. link |
