One can full-fat coconut milk - yes, buy the full-fat coconut milk in the can; you want it rich and creamy.

Dilute with 1/2 can water. Two parts coconut milk to one part water, more or less depending on how creamy you want it. Add little sweetener and vanilla. Mix.

Blend one cup of the coconut milk mix with 1/2 cup orange/carrot juice (or just plain OJ).

Yum!

this DOES sound outrageously yummy! growing up I used to pour OJ over ice cream, or coke over ice cream... lots of things go with ice cream. so, is full fat coconut milk better for you than ice cream?

Yes, it's unsweetened, so you can control how much and what kind of sweetener you use, if any. The juice is already pretty sweet, but it's not "empty calories". It's high in fat like ice cream, but it's not as bad as the fat in ice cream. If you're lactose intolerant (or allergic to dairy) it's a good creamy substitute in many things - smoothie's, soup bases, to say nothing of those coconut milk curries :). Coconut oil is a good cooking oil for some things too. It's also good with oatmeal, etc.


I plan to try it with different juices, fruits and vegetables. I think it'll be good with some really ripe, juicy watermelon ;).

I went on a smoothie kickfor about six months, using only fresh ingredients spinach,kale, blueberries,strawberries..etc. I gained weight...an important thing to remember is while all healthy ingredients,the sugar content can be very high...and I used plain water as my liquid.....important to remember that
