I have two great trout recipes... this is my favorite. The stuffing is very tolerant with changes in quantities of all ingredients. For soft bread crumbs is just cube 3 or 4 slices of bread.

2 pan dressed trout
2 tsp salt
Vegetable Stuffing
bacon strips
paprika

Sprinkle trout inside and out with salt. Stuff fish and place in well greased baking pan. Place bacon on each fish to cover and sprinkle with paprika. Bake at 350 for 30 minutes. Broil 3 minutes until bacon is crisp.

Vegetable Stuffing:
1 cup grated carrot
3/4 cup chopped celery
1/2 cup chopped onion
1/3 cup vegetable oil
2 cups soft bread crumbs
1 T lemon juice
1/2 t salt
1/4 t white pepper
1/4 t thyme

Cook vegetables in oil until tender, stirring. Add remaining ingredients and mix lightly.

Thanks, sounds good. Have you ever added mushrooms? garlic? Or substituted a grain for the bread crumbs?

I haven't tried mushrooms. That might work if diced small.


Garlic would not work... it would overpower the delicate flavors.


I have added shrimp pieces that were lightly sautéed and they finish cooking while the trout bakes. That adds a nice flavor.


Try the recipe as listed once, and then work on additions and substitutions.

oh, and the bread crumbs are really 1/2" cubes. Not sure if grains would be a good sub?
