Found a new recipe in the paper a few months back. It sounded good and I decided to give it a try while the wife was gone since it's not the kind of thing she's crazy about. I liked it. It was not difficult to do.

Ingredients:

1 green cabbage
1 yellow onion
2 apples (it calls for Granny Smith; I used Gala that I had)
2 TBSP olive oil (I may have used a little more :)
1 TBSP (may have used more :)) curry powder - mild, medium, or hot
Kosher salt, black pepper
1/4 cup currants (I used raisins I had)
1/4 cup toasted slivered almonds



Basically you preheat the oven to 400 degrees, line baking sheets with foil or parchment.

Quarter and core the cabbage, cut quarters into thin wedges/slices
Vertically slice onion into thin strips
Core and thinly slice apples
Combine with olive oil, toss to coat
Sprinkle with curry powder, salt, and pepper

bake until tender, about 20-30 minutes
Sprinkle with currants and almonds, serve with lemon slices/wedges
