I found a simple and tasty side dish for those fish fry nights. I stumbled across some Rice River Farms Festival Medley wild rice blend at my local bakery before taking a trip over Labor Day.
It couldn't have been easier, and it couldn't have tasted better.

Idahoan brand instant potatoes....

they come in a packet and really taste great...there are several varieties.....just and to boiling water and let set 5 minutes....

I agree with Woodpecker. The mashed taters are so quick, your fish won't even get cold while you prepare them if you are a one burner person.

Zatarain's makes some great rice side dishes that are easy to pack and cook.

Pepperidge farm stuffing, or thin sliced potatoes fried in oil previous to fish. Uses a lot of of oil thou. Zatarains is also a winner, hash browns with cheese and onions, man, too many choices. Forget the fish, just carb out, lol. Also prefrying bacon and onions breaded in fish batter, yum.

we have used Suddenly Salad, and other times fried potatoes, other times stuffing.

The Idahoan instant potatoes and Stove Top stuffing are the big winners in the no hassle category in my cook book. But my favorite, by far, is fried sliced potatoes and onions.

agreed with everything so far and would like to add, any creamy Bear Creek soup... Creamy potato, Cheddar Broccoli, Creamy Wild Rice, Clam Chowder, or even Tortilla. Give that fish one last swim in your soup. Nice dipping

Try your fish in foil on the fire with cut up carrots, herbs and butter.

I like greens and cornbread with fish. (But I've never tried or seen dehydrated greens) A new experiment is in store :)

We also discovered the Bear Creek Soup Mix for Fish last year. Light Weight and feeds many. Work great as a fish soup dish or side dish. Especially the creamy wild rice, fantastic!

The bear creek soups are awesome, cube some northern into the creamy potato soup and it is wonderful. Also, just plain mac and cheese or ramen make good side dishes to fish.

Last year I found Betty Crocker dehydrated boxed potato slices with a flavor pouch. They were on sale for .50 cents so I stocked up on them. Packed them without the box ( to conserve a little weight and bulk ) Re-hydrated them in hot water for 5 minutes. drained the water, then fried them in a little oil or butter with a red onion. I put the flavor pouch in with the fish fry batter. PERFECT!!! Lightweight, and tasted as if we had brought fresh taters and sliced them up. Cooked up faster also.

Shore lunch is not complete w/o fried potatoes and onions, and maybe a clove or two of garlic.

Hash browns, Fish has to coated with Uncle Bucks. Lard is king for frying both.
