What spices do most of you take?
I like cayenne pepper, extra virgin olive oil, fresh garlic and fresh onion. With those items, I can even make freeze dried squash eddible.
(Of course, salt and black pepper)
Always looking for new ideas.

Thanks snakecharmer. I do take lemon pepper if I am planning on cooking fish. But I am pretty much catch and release in the B-dub.

Salt, pepper, Emeril's Creole seasoning, Cayenne, garlic and oregano. It's all in the handy little six pack spice container listed on another thread.

I'm a cooking fool...If I were to tell you all the spices that are going in with me this year I might be the laughing stock of the board :) Lets just say my options will be open!!

As a contribution to the post I have found that the small bottles that are used for bubbles at weddings make great spice containers...My wife had a bag full of them left over (empty never used) in the basement, I made good use of them!!

Kosher salt, pepper, lemon pepper, garlic, thyme, dill weed, red pepper. Also bring small amount of fresh stuff from garden- garlic, onion, fresh hot peppers, couple of small, late tomatoes.

I'm pretty much right on with what you have CaptnDan. I also usually have Penzey's freeze dried bell pepper flakes. I can usually find a use for them in most of my meals or the meals others bring.
I don't think of bell peppers as a spice, but they sort of fit the category, especially freeze dried.

Thanks to all. I think I will add dried bell peppers and dill to my little spice cache this year. I need to visit Penzey's anyway. Kind of a cook's candy store.

For us it's ceyenne pepper, cajun seasoning, garlic powder or garlic salt, bay seasoning & black pepper.

I bring salt, pepper and Mrs. dash. I will and other spices to the meals as I bag them up at home before the trip.

Salt and pepper. Fresh garlic, onion, rosemary, cilantro (for the fish tacos). Dried oregano, thyme, cayenne, cinnamon.

i dehydrate tons of veggies and fruits to cook with before we go
its terrible but i have a hip pack stuffed to the gills with them and loads of spices. i also keep any eye out for fresh wild edibles to spice things up with a tip if you want to cookk with dehydrated fruit, carry some sugar packets and use some when rehydrating them for cooking it will give it some fruit syrup to cook with

Take Chinese Five spice and mix it with a little Cinnamon to put into your pancakes. It makes them taste like a pastry. mmmmmmmmmmmmmm

brought garlic powder this year and it really improved some dishes. will become a permanent spice for sure.

Our ketchup/salsa of choice is Pad Thai sauce. :-D Makes nearly anything taste fabu.

I was just poking around Cub for food ideas for my upcoming BWCA trip. I discovered that they carry the dried bell peppers (red and green) in their spices area by their organic foods area - in Cub Branded baggie. Seems to be a little cheaper than Penzeys.
