Hey,

I was hoping to start a thread where people could post their food/meal lists. This would be a resource for anyone doing meal planning.

Here's mine for an upcoming 7 night trip.

DINNERS:

STIR FRIED CHICKEN WITH FRESH VEGGIES.

Thanks for the list, I am getting ready for my first trip into the BW and got some good ideas for meals and snacks from you. This was a big help in putting together my meal plan for my upcoming 4 day trip.

Breakfast is pretty straight forward - alternating oatmeal and pancakes/pre-cooked bacon.

Lunches alternate Hudson Bay Bread with PB&J and beef jerky and crackers/cheese/sausage. Nothing spectacular, although the Hudson Bay Bread is a favorite.

For supper, we eat fish with different side dishes each night, but here's a favorite of ours on every trip:

CHICKEN SOFT SHELL TACOS
One 7 oz. pkg. Sweet Sue Chicken in Foil
1/2 packet Chicken Taco seasoning
Add water based on quantity (from seasoning packet)
Grated cheese
Shredded lettuce (optional)
Sliced black olives (optional)
Soft taco or burrito shells
(Adjust quantities as needed for your group.)

Cooking instructions:
Brown chicken in pan. Add seasoning and water. Continue to heat and stir for five to ten minutes. Cover and remove from heat.
Put a few drops of oil in a pan (optional) and brown the taco shells. Maybe a minute on each side.
Remove, put on plate, add meat to taco, top with cheese, lettuce and/or black olives and enjoy. Bring a few hot sauce packets like the ones at Taco Bell for some added flavor.
Super simple and super good.

Variations/Hints:
This meal should be eaten in the earlier portion of a trip due to the cheese needing refrigeration. However, we ate it on day four and it was fine.

Comments:
For planning purposes, one packet of chicken will make two tacos, enough for one person.

We took this meal on a Quetico trip for the first time in 2003. Talking with their mouths full, the guys all said we'd never take another Quetico trip without Chicken Soft Shell Tacos on the menu. I guess that means THEY LIKED IT!

i really don't cook,i just make something to eat.
breakfast is pancakes made from waffle mix or a dry egg and rice,tomato,onion and bacon mash-up of some sort with coffee.
lunch-a hard cracker or pocket bread of some kind with peanut butter or summer sausage and cheese,a candy bite,beer nuts,maybe a power bar of some sort and Tang.if it's a lay over day i'll make tea,maybe a hot bannock rather than a cracker.
dinner-a rice side with a pack of freeze dry chicken when i want a fast dinner or i'm really not that hungry or it's too hot for a big meal. a big meal is a MRE chicken paddy with a noodle side, or a MRE pork paddy with Mac and Cheese.i found if i fry the chicken or pork paddy i get a better flavor that just heating in the pouch.a cookie and some sort of drink with rum as a follow up.i'll make a bannock if i'm really hungry. i also make a stew sometimes from Knore summer veg soup with pre cooked wild rice and some sort of dry meat.buffalo burger or freeze dry pork.being the retired one in the family i cook most of our dinners so out on the canoe trail i like an easy dinner and use my time to read or just look at the lake.

Marsonite, great thread. I'm already getting new ideas for next year (Jackfish, we'll definitely do those chicken tacos!). I'm going with primarily freezer bag cooking (FBC) recipes this year. I got the recipes mostly from the FBC cookbook that I bought off the trailcooking.com website. It was some work to put it all together, but now I won't be doing that in camp. I just hope we like most of it. ;-) I don't have the ingredients with me right now; perhaps I will add those later for the ones I don't remember. I would not do steak the first night if my husband didn't want it so much; traditional for him on the first night.

Here is what we're planning for our trip next week (5 day/4 night, for 2 people):

BREAKFASTS:

BREAKFAST TRAIL COUSCOUS (FBC)
A modified FBC recipe (was Breakfast Trail Rice)
Couscous
Cinnamon
Brown sugar
Toasted walnuts
Dried fruit (either apples or peaches)

BACON AND POTATO CHOWDER (FBC) (with Veggie & Bacon salad, below)
Dried hash brown potatoes

We will add fish, if we catch any, and adjust what we eat at the time that it happens. We are novices when it comes to fishing, so I didn't feel like we could even plan to have one fish meal. Some of the suppers seem like a lot of food for one time; I guess we’ll find out!

Drinks: hot tea, hot chocolate, drink mix-ins

Snacks: GORP and beef jerky. Also PB&J if we ever need to add something somewhere; I have plenty of the PB&J and probably have way too many tortillas. I think I have 24, 8".

I'm excited about having desserts. Totally unnecessary, yes, but it's going to be delicious.

Dehydrated meals if we don't catch fish.

*-Sausage muffins with cheese(fry bread with slice of cheese and precooked sausage patty)

BLT wraps (tortilla, pre-cooked bacon, tomato and romaine
Tuna pasta salad (foil pack tuna, dehydrated peas and other veg. mayo packets
Trail Lunch (salami, cheese, crackers, GORP, dried fruit)

Supper:
Tuna helper -w/foil packed tuna, dried peas and packaged fried onions
Spaghetti-dehydrated burger, pasta, dried tomato paste and spice mix
Biscuits with all-(fry bread or water only bisquick variety)
Chicken in gravy w/ stuffing (foil pouch chicken, stove top and gravy mixes)
Calzones-(tortilla crusts, tomato paste, dried vegs, pepperoni,cheese)

Sweets:
Chocolate cake with fudge sauce
Cherry Cheese cake (jello brand assortment)
Ginger bread and apple sauce
carrot cake with cream cheese frosting

Treats:
GORP - high test-good variety of nuts and chocolate with raisins
Popcorn - cook over fire in largest pan
Chocolate of various sizes and shapes
Coffee Mocha - powdered milk, coco, sugar and instant coffee

Our menu from a recent 7 day trip. We bring an double-wide aluminum pie iron that we cook with along with a stove and grate.

Breakfast: granola bars, instant oatmeal, blueberry muffin mix (pie iron)

Lunch: Tuna sandwiches, Chicken sandwiches, Fish, Knorrs rice sides

Dinner: Steak (1st day), Fish, rice sides, instant potatoes, Tuna + rice sides, Chicken + rice sides, Pizza (pepperoni, pizza sauce, butter, bread, sliced string cheese, parmesan, pie iron)

Snacks: Beef Jerky, granola bars, trail mix

Misc: lots of packets of mayo, lemon juice, etc.

This is the menu we use for our august 09 trip. The group consisted of eight people for four nights and five days.

Breakfast
Day 1) bagels and cream cheese
Day 2) Bacon egg and cheese Mc muffin or oat meal and drink
Day 3) Hudson bay bread gorp and drink
Day 4) Ham steak, oat meal and corn bread with honey
Day 5) Hudson bay bread or breakfast bars dried fruit and drink

Lunch
Day 1) Summer sausage pita cheese fruit and drink
Day 2)Tuna crackers string cheese nuts dried fruit and drink
Day 3) Venison sausage tortilla's cheese sticks cookies dried fruit and drink
Day 4) Jerky cheese sticks gorp cookies nuts dried fruit and drink
Day 5) Lunch in Grand Marais

Dinner
Day 1) Steak, lobster, and shrimp stir fry boil in bag rice frozen stir fry vegetables and drink
Day 2) Steak fajita red and green peppers purple onion tortilla's cookies and drink
Day 3) Ring baloney and kielbasa, tri colored pasta carrots cookies and drink
Day 4) Chicken couscous with pine nuts corn bread cookies and drink

I may be missing some of the items but this is pretty much the main part of the menu

Quick update on how the food turned out for us. I loved everything except the desserts. They tasted too much of powdered milk. Blech. The pizza was good, but after the quick and easy prep of the FBC meals, I didn't like making it. Plus I was annoyed about having extra ingredients left over. Our favorites were the veggie & bacon salad and the hamburger cheesy veggie wraps. My least favorite, though my husband liked it quite well, was the potato and bacon chowder.
