On another thread nojobro asked about the pan fried peanut butter cookies in my trip report. Here is the scoop:
I was looking for desserts for our trip and noticed that the packaged peanut butter cookie mix only required one to add oil and an egg. Did an experiment at home and my kids loved them.
I took the mix (generic store brand) and added the recipe amount of oil and for the egg I used a single egg amount of powdered egg mixed in the right amount of water (I believe this was 1 tablespoon of powder and 2 tablespoons of water). Mix well and then form discs from the dough. Put them in a pan and fry. No extra oil in pan needed.
*Be very careful, these bad boys burn very, very easily.*
Does it turn out like a cookie....no. More like warmed over cookie dough...but everyone wanted more and it was all gone. Unanimously voted in for the next trip. Heck, I bet the guys I went with would have eaten the dough raw.
Never criticize someone until you walk a mile in their shoes....by then you'll be a mile away and they will be shoeless!
