My Grandfather used to share this recipe with newcomers around fire. We loved it. Take large carp and place on pine shelving/sheeting board (1x8 or 1x12) . Place on fire. In 5-10 min. flip board and fish. Char both side of both until juices run out. Remove from fire,let cool a bit ,then throw fish to coons and EAT THE BOARD! HA HA HO HO. Could'nt resist. It was a "Grampa Joke" as we used to say. Actually, Granny would remove "mud vein" and prepare something edible, but not my favorite. Guess it wont work so well on stove, but glad fire is subdued. Pray for Rain and People's safety. OTH

One of the guys on our trip caught a carp, so I decided to have him keep it. I cleaned it kept skin on soaked with syrup and salted lightly, wrapped in tin foil and poked holes in it shoved it in the rocks around fire where smoke seemed to be the heaviest. was a nice tasty smoked treat 6 hours later.

We make chowder out of suckers, all you need to do is chop it up into cubes with potatoes, onions, milk, garlic, carrots, and anything else that goes in chowder, and boil it hard.

It's great.

Carp is my favorite fish for smoking. Very popular in Mississippi River Territory..
Suckers are great for pickling..

I smoked some suckers that I shot this spring. I soaked them in a brine and put a fairly good amount of brown sugar on top of the fillets.
When it came out of the smoker it was like candy. It was simply the BEST smoked fish I have made. Better than 90% of the salmon even. Next year I plan on shooting a lot more, and keeping them when I catch them fishing for steelies in the spring.

I catch tons of carp while catfishing, but I dont keep them. They are all to big and come out of the mississippi river.
back in the water they go. They are a hoot to catch though.

I have heard that sucker make great fish patties, but Havent gotten around to it yet.
