I normally do not use breading in the BWCA... I just put a little oil and butter in the skillet and put either a little lemon-pepper, cajun, or Emeril's spice on it and cook it that way. Less oil to carry and don't have to worry about cornmeal either...

I use a mix that I make from corn meal, garlic powder, parmesan cheese, and salt & pepper. Usually I will mix it up before the trip and just take it in a baggy, but again it only has one use. I think that it tastes a lot better then the biscuit mix that I used to use.
