I make this every year for the boys. We're probably the only one's up there eating kraut.

2-1 1/2 Lbs Bags of sauerkraut

6- Landjaegers
(cut up)
and some potato flakes to thicken it up.

In a separate pot I make a half of a bag of dumpling mix according to instructions and when they are done I add them to the kraut.

This is a recipe for 4 guys.

The bagged kraut will keep good since it's in vinegar and the landjaegers keep 4-5 days since they are sausages. I've had landjaegers get abit slimey and moldy in hot weather but that doesn't bother anything.They're still good.

Even after having heard that... it still sounds kind of good. But I love kraut.

Now... what is a landjaeger?

It's a german sausage similar in size to a bratwurst. Kind of like a giant skin-on wiener. you could also use skin-on-wieners if you can't get landjaegers (pronounced londyager). You should cut them up so their juices cook into the kraut.

Barley,

Any beverage recommendations to compliment this recipe? I'm thinking a Bavarian-style lager...or perhaps some purified lake water.

My mouth is watering just thinking about it.

As of June 11th, the Northwoods Sauerkraut has been banned from our future menus. Several of our party (me, Snakecharmer
and Mooseplums) experienced a gastral intestinal disorder. We were'nt sick, but let's just say it wasn't pretty.

Yeah, I did have Schell's with in the new plastic 16 oz bottles. Still, we have banned the kraut recipe. I've been making it for several years now, I can't understand what went wrong this year. It wasn't pretty.

I've heard the Schell's can do that too. Maybe your party can't handle that good Ulmer Beer! :) What I would give for a Schmaltz Alt right now. Have one for me Mr. Barley! p.s. Schell's in a plastic bottle?!?!?!?!?!????? When did that happen?

Unfortunately, I was one of the guys who developed a problem and I drink Schell products on the daily basis. I can only surmise that it had more to do with the kraut of the kielbaasa I used.

They started putting Schell Original, Light, Grain belt Premium and Premium light in 16 oz plastic bottles about a month ago. I think they're aiming at festivals and stadiums.

Fishguts, Have you tried Mr. Barley's sauerkraut recipe with the landjaegers you got from New Ulm? Let us konw how it is!

The recipe has been banned from our trip after a few years of "atta' boys" from my fellow trippers. This past June things got ugly. I happen to be making kraut for supper tonight. Not the backwoods recipe however. I'll be using fresh pork this time and crockpotting it.

Yeah, but if you're within running distance of a toilet, it's just fine. And if you're in the Quetico, everywhere you look has toilet potential. By the way Moose plums, don't "dis" my cooking. I got a batch of kraut simmering in the crock right now (home with Alexander today). Should be divine with a bottle of Schell's pilsner and some rye bread. Prosit!

I tried this recipi last June for the first time after i read your orignal post. Didnt have any problems and it tasted great.

Glad you liked it. Someday I hope to get the ban lifted. I used kielbasa last year instead of landjaegers, but I don't see how that would have caused the volcanic hell experienced by a few of us.

Well I think the landjaegers are cured better and will not spoil as quick as the kielbasa. Also we had it the first night to make sure there were no issues with anything going bad. We will be having it again this summer as it was a big hit, hope all goes well!

I think the kielbasa kraut was only about 3 days into the trip. Mooseplums and I made it on Oyster a few years back and we had a little surface funk going on on the landjaegers. We just wiped it off and heated them up in or kraut. No problems that time. I vote for bringing it back this year. I think last year was a fluke.

Return to the original recipe and you have my vote. It was perfect, and you can't improve on perfection!
