      Easy Fish Soup

For a change, especially on a wet, chilly day I always carry along a package of Chicken Noodle soup mix. The 8 serving-size that only requires the addition of water. It is prepared by bringing 8 cups of water to a boil and then stirring in the soup mixture. Reduce heat and simmer for 10 minutes. Then add one to two pounds of fish. Any fish, even pike does well. The fish should be filleted and then cut into bite-size pieces. Simmer the soup for an addition 10 minutes. Serve with crackers, bread, etc.

I make fish soup too. I use one package of Ramen noodles. Put the noodle in a pan with some fish of the day, put in the seasoning, bring to a boil for 3-5 minutes. It is a really tasty dinner.

Here's another fish soup option:

Bear Creek Clam Chowder and add fish instead of clams. All you add is water and its very good.

I've used Knorr Vegetable Soup and some minute rice. The recipe goes like this:

If you catch one fish, make the soup with the minute rice added. Use extra water. The last 5 or 10 minutes add the chunked fish.

If you catch a lot of fish, bake, fry, or poach the fish. Make the minute rice flavored with the soup mix.

If you catch a lot of fish and are cold and hungry before the fish are cleaned. Make the soup and eat. Then bake, fry, or poach the fish. Make the minute rice.

Oh! I forgot the "If you don't catch any fish" recipe:

Make the soup with extra water and minute rice. Add chunked salami, or cheese, or nothing. Bake some bannock. Get the peanut butter out.

This is the recipe I use most often. :-)
