Roger, I'm not familiar with trout jumbo. If you meant trout gumbo, I haven't tried that either, but it sounds like a good idea!

I always take the boxes of Zatarains rice camping with me. They make a gumbo flavored mix. I have never tried using that one with trout before, but it would sure be an easy way to pull it off. Another thing one of my friends did was use northern pike in tuna helper, it wasn't the best meal I have ever had.

I second the Zatarains gumbo -- it is great with fish in it, as is their jambalaya.
