We take block (brick) cheese all the time. It's virtually bullet proof. We keep it with the cold food, but it holds up well even if it's warm for a couple days. Also, Velveeta works well. It's shelf stable, lasts forever 'til you open it. Even after that, if you cut sections off foil and all then put the rest in a Zip Loc bag, only the very end dries out and the rest is like new. It also melts easily, you can have nachos, quesadillas or grilled cheese. It also comes in a "Mexican" style. We've also used the generic (house brands)and they're just as good.

I like to bring those little round wax coated wheels of gouda or edam. Like you said there bulletproof. Bringing some string cheese up this year.

Took in a pound of pepper jack and a pound of colby w/ bacon bits, in this week and kept them in zip lock bags. What is left is in our fridge as I write. Neither went bad. Maybe another 4 days and they would of went downhill?? What is the worst that can happen, cut a little mold off? We use the cheese as a replacement for milk in noodles and rice we cook up.

I have had sharp cheddar last 2 weeks without any trouble at all...just a little oily when it's hot.
