My trip is scheduled for the end of July. I am going with a group of folks, two of which can not eat gluten. Unfortunately, this is found in many items. I'm o.k. with breakfast and lunch, but does anyone have any good, gluten free dinner ideas?

This should not hinder you in any way. Think rice and beans. A few ideas that jump to mind here:
Corn tortilla burritos.
Soup
Rice Noodles
Rice and Beans.
Google gluten free recipes and youll find many recipes that could be converted to camping style.

Just get a box of Zatarian's Jambalaya in the box and add a pound of smoked sausage to it. Zatarian's is a national brand and you should be able to find it all over. Buy your smoked sausage vacuum sealed and it will keep without refridgeration for several days.

My wife is gluten free as well. We just spent a heavenly week the beginning of June. We took the time to dehydrate some of our own meals. One of the things you have to watch for is Soy Sauce (in most jerky and it's in a lot of teriyaki, etc.) as it is a wheat product. Watch the oatmeal because it's processed in the same facilities, quite often it's not gluten free.
Corn flakes CAN be used if they are GF. Kellogg's aren't. You would have to look at the labels. One of the giveaways is if there is malt in the product. Another bad thing can be MSG, it's up for debate, but I would avoid it to be safe.
We used potato flakes for breading the fish. Rice in the morning with some raisins or other fruit. Lunches were snacks of home made beef jerky, cheese, nut crackers, etc. Blue Diamond makes these and they can be purchased at most health food stores or aisles.
Dinners were usually where we worked a little harder. The best one was when we had made our own spaghetti sauce, then dehydrated it. We used her special noodles and it was fabulous! She ate dehydrated fruit (can be purchased or made at home), we also made our own meals of Minute Rice (so it wouldn't have to cook for 15 minutes) and dehydrated veggies with meat added (here we added fish and/or jerky).

I hope this isn't too late but I just saw the post. I have celiac's disease, I'm headed to the boundary waters for the first time in early August. I did some research and this may be of help:
www.tyry.com (they have gluten free freeze dried meals. I can't say whether they are good or not but they are freeze dried, gluten free, and that is pretty rare).
www.tcsjerky.com (they sell gluten free beef jerky. Again, I've never had it but this is a rarity)

I must attest, I have eaten Alpine Aire's Instant Gluten Free Chicken Gumbo and have found it to be pretty tasty, and my girlfriend is the gluten intolerant one!
