2 lbs red flank meat
.5 c soy sauce
.5 c sake (or sherry or dry vermouth for the less pretentious)
.25 c sesame seeds
1 tblsp. brown sugar
1 tblsp salt
.5 tsp. black pepper
Cut the meat into strips 1/4 inch thick x 1 inch wide.
Mix all other ingredients EXCEPT the sesame seeds in a large bowl. Then place the meat in the marinade and toss to coat well. Cover the bowl and put in the fridge overnight.
Drain the meat the next day. Pour the sesame seeds over the meat and toss again to coat the strips with the seeds.
Place the strips in your dehydrator and dehydrate for 6-8 hours.

This is the first time I have read anyone step by step explain how to turn sesame seeds into some jerky form. I didn't think this was possible, at least for non meat food items. Thanks for this recipe.
