      Breakfast burritos

On one beautiful morning in the B.W.C.A.W. my girlfriend suggested that we combine some of our ingredients into breakfast burritos!

Here's what we happened to have in our packs:
1.Tortillas-easily packable and they keep a long time!
2. Dried refried beans-add hot water
3. Powdered eggs-add hot water.
4. Dried sausage patties-you guessed it.
5. Hashbrowns O'brien (camp food)
6. Cheese (something on the hard side will last a few days unrefridgerated!)
7. Cooking oil (bring along in a small plastic bottle)

I fried the hashbrowns O'brien per the instructions and tossed in the sausage patties broken up. To save pan space I just poured the egg mixture on top and cooked it all together. Spice to taste with salt, pepper, cumin. Spoon this tasty filling onto your tortillas and you'll be fine until dinner!

Just a little variation... I also used powdered eggs, but added a little powdered milk to go with it. We used dried Bacon Bits, Dried Onions, and Cheese, rather than carry in the sausage. Cooked the hashbrowns and ate them seperately. But with a good cup of hot coffee it was all good

The only thing I add to this is onion. Not sure why but it really adds to the taste (personal thing).

Farm fresh eggs will keep for weeks w/o refrigeration. If you can pack them, they are a true delight! It works best to keep them in the paper carton (not styrofoam) & wrap newspaper around them. Of course, you would be sure that the carrier knew to not sit on that pack!

For fresh eggs I also pack them in the original cardboard carrier they came in. Wrap them in newspaper and then some additional cardboard around that. All of that goes into a sealed plastic bag just in case one does break. I have not had an egg break yet.
