Vigo brand red beans and rice (3)
1/2 stick butter (or lard),
one half white onion / one half red onion
shredded or (waxed) block cheese
12-24 small beef sticks (I use 1" dia. x 8")
garlic cloves
Slice beef sticks, fry with smashed garlic till a little crisp - then add chopped onions, simmer a few minutes then set aside.
Prepare vigo red beans and rice as directed, add garlic and salt/pepper to taste.
Spoon some red beans and rice into tortillas - add a spoonful of beef sticks/onoins - add cheese and fold.
This has become a group favorite - If I didn't bring it along I'd be swimming home.
