I know that we can freeze eggs, but how does one go about it? DO you leave the shell on? Will the shell explode during freezing, I have never froze them so any input would be greatly appreciated.
Thanks and I am under a month from my first trip of 2005.

The eggs will crack. If you are trying to freeze them to avoid spoilage, well, I personally wound not. Eggs can last longer than you think without refrigeration. They are designed to sit under a chicken after all. My recommendation would be to refrigerate the eggs as close to freezing as possible and then store them deep in the food bag to near the ice (if you bring it). I have also heard that you can buy pasteurized eggs in the shell (correct me if I ma wrong).

I have used pasteurized eggs, you can't tell the difference.

I tried freezing some eggs for a trip a few weeks ago and it worked well. I prepared them in a bowl for scrambling...mixed them up with a bit of milk, some bacon bits and shredded cheese...put them in a zip loc bag, then another in case of leakage and popped them in the freezer. We cooked them up our second morning and they were great.

Speaking of ziploc bags: I'm an Assistant Scoutmaster here in IL, and our troop has experimented with an idea we heard about. You have to use the good, name brand bags, not the generic or the ones you get at Aldi. You can scramble eggs in a gallon ziploc, then boil them in the bag. Scrambled eggs, no cleanup! If you froze them in the bag, then boiled them in the bag, you'd solve transport and storage, cooking, and cleanup all at once.
