I have been making a quick Paella at home (a spanish dish made with many meats and saffron rice) One night it dawned on me that I could make it "out there".
(feeds 3-4 people depending on size of bag of rice)
One bag of saffron rice (available at most grocers)
One onion chopped
One red pepper chopped
Garlic (plenty)
Fresh caught fish/crawdads
2 Hard Chorizo sausages sliced (available vacuum packed from grocer)
Chicken cubed (I will try to find bagged)
Hot sauce or cayenne to taste
Salt and pepper
-One pot cooking
Saute veggies and meat in tablespoon of oil 5 minutes (chorizo also gives off flavorful oil)
Add rice and water per instructions and cover 20 minutes stirring towards the end.
I'm heading up in a couple of weeks and paella is on my menu! So glad to find this post. Although I'm using a box of premeasured rice & seasonings but adding dried seafood from the chinese grocery store. (And hopefully some fresh fish.)
I just take all the plastic bags & pouches out of the cardboard box, cut the cooking directions, tape 'em to the pouch, throw it all in a baggie and I'm good to go.
