Freeze the chicken or steak and it will be fine night one and maybe even night 2. Wrap the frozen meat in newsprint and tape closed. Bury it in the middle of the food pack and keep the pack out of direct sunlight as much as possible (hard to do in a canoe) on land and portages. I'll bet even in 85-90 degree temps the steak or chicken will still be cold for dinner the second night.

I like to do fajitas with fresh peppers ( red and green) and a purple onion topped with shedded taco cheese the first night out. Either steak or chicken work. Some trips we will do steak one night and chicken the next. Most of the time I will cook the meat at home adding the fajita seasoning to it, and then freeze it. This saves on cooking time that first night and it travels better than raw meat. Next week I am trying something new. I am trying pork chops with potatoes, carrots and onion topped with a brown gravy with sour cream added to it. All of this is wrapped in aluminun foil and frozen. Put this on the coals and 40 minutes later should have a tasty dinner. I hope it doesnt rain the first night out.

I agree with bogwalker---if you take your steak or chicken frozen, you should have no problem for the first night.
We always take steak for night one, but have on occasion not cooked it the first night and if you store it as bog said, it will be cold for the second night also.

Steak is my prefer choice. I buy a good top sirloin and trim the fat and cube it up then freeze. I also put some butter in a small Ziploc in with the steak. Then take it out cook in butter over a low fire and server with either backed potatoes or rice. The juice can be augmented with some soup base or gravy mix. Serve with cauliflower and a nice dessert. It cooks easily and I have not had leftovers yet.

Ditto Fishinbudy, cubed steak frozen heavily peppered then frozen in vacuum bag. Love taking steak and while cooking have package Lipton boiled in bag wild rice boiling in water. They have several types and each is easy to make (just boil) and all have great flavor. Sometimes I eat one alone for lunch.

No Name Steaks. I like them cause they're sealed in plastic. I keep em frozen as long as possible. Wrap in newspaper and a plastic bag, and transfer to the pack. It will last no problem until supper (may even be still slightly frozen).
Prepare a rice, potato, or noodle side dish (like the easy to fix Lipton things). Serve a "Dole Complete" salad (it'll last till supper unrefrigerated as well). Top off with a "lunch pack" pudding cup.
Oh yeah, you should also have a little red wine for supper and a bit of bourbon for after.

Sounds like my kind of dinner Bannock!!! Especially if it is cooked over a fire with maybe some fresh baked refelctor oven biscuits to go along with it. The bourbon (Maker's Mark of course) settles everything for a nice nights sleep.
Might just do this with my 13 year old on our one night trip. Everything except the bourbon of course.

3/4 inch ribeyes the first night. Vac sealed and frozen individually to help thawing in time for dinner. Chicken breasts the second night. Vac sealed and frozen in one pack. Usually keep quite cold and sometimes a little ice yet.
