Bellolake brought this to Springwing 2014. It is my friends recipe. Very good with corn chips of any kind. This makes a big batch. If you look on line, you can find many recipes for this.
2 cans pinto beans
2 cans black beans
1 can black eyed peas
Mix with:
1 lb frozen corn
1 chopped red onion
1 chopped green pepper
1 chopped jalapeno or green chili pepper (I used mild chili peppers, can't take the heat!)
1 chopped sweet red pepper
1 large jar chunky salsa
Sauce:
Mix 3/4 cup cider vinegar or balsamic vinegar
1/2 cup sugar
1/2 c olive
3 cloves garlic
1 tsp pepper
salt to taste
1 T water
Bring sauce to a boil, remove from heat and let cool before mixing with the rest of the ingredients. This recipe makes a very large batch.

This does look like a huge amount but then that got me thinking about whether you could dehydrate the mixture of everything up to the salsa and then just mix up a small batch of vinaigrette to add to the rehydrated caviar in camp.

I love cowboy caviar and think it would make a great lunch or side dish for summer camping.
