It's that time of year when artichokes are at about their lowest price level. This is a great way to do them, simmering in olive oil, wine, and water with shallots or onions (if you don't have shallots) and garlic. I'll just post a link to the site where I found the recipe. Never tried it with the parsley and mint, it's very good without them. Simplyrecipes is an excellent source. Good Stuff.
