Looking at one of these devices. It can store 5,000 waypoints. Seeing as how there are about 3,865 "waypoints" in the most commonly used campsite & portage beginning/end download, am I right in assuming that I can just store all of them as waypoints instead of POI's? I have a Visa gift card and Cabela's gift card burning a hole in my pocket.

I think the waypoint limit is applied to saved or installed waypoints. If setup as part of a map, the campsites, portages and routes, are installed as map items and do not affect total waypoint limits. When I had a 62st I had many maps that displayed camps, routes, portages, and such that could be viewed as layers on the display. This screenshot shows PaddleNav, MNTopo, BWCA camps and portages, 100k Garmin Topo, all displayed at one time.
