Do you already have Pita pizzas on your list?
PB&J tortillas are sort of lunch but also work for dinner.
Chicken noodle soup?
mountain house or backpacker's pantry (not sure which) Spaghetti and meatballs - I found these at Wal-mart for cheap.
I'll keep thinking about it, my son is tough to feed so I just bring mac and cheese and hope he eats other stuff. On our last trip he ate it for two of four nights.

My kids think Ramen is a treat... they've also been known to munch on the noodles UNcooked - eek.
MountainHouse lasagna is always a favorite... echo the tuna helper but it's messier and smellier. Kids liked beef stroganoff this spring and will fight over pasta primavera. All spendier than Kraft mac n cheese though.
Pita pizza, mmmmmmm. Quit making that when FIVE campers got hungry too fast! but it is good. Tortilla anything - add chicken or ham and cheese, or grill onions/peppers, etc.
Kids like Miso Soup here at the house - it's SOoooooo lightweight, but kind of bulky in its paper bowl. Considered repackaging it for BW. Maybe there's a kind of soup she likes?
