Great timing to start this forum! I was ready to throw this question on the board either in the General forum or the Camping Recipes.
I'm looking for a delicious and healthy spaghetti sauce recipe that I can make at home instead of trying to rely on the stuff in the jars at the grocery store.
Anyone have a knock-out recipe to share?

Olive oil to coat the pan,
2 - 3 tbl spoons of minced garlic
3 cans of whole tomatoes
Basil- about 10 leaves or 1.5 tbl spoons of basil in a tube
Drain the tomatoes and save the juice
The garlic in the oil until golden, add the basil and cook for about a minute.
Add the tomatoes and turn heat to high. Cook for about five minutes, or until the tomatoes start to break down. I like to use a wooden spoon to help break them up.
Once they break up you can turn the heat down and simmer for 1/2 hour. If you want a thinner sauce you can add a bit of the tomatoes juice to thin it out.
I've let it cool and run it though the food processer to make it more smooth.

Good sauce is a labor of love.
First you roast tomatoes in the oven with a bit olive oil and salt, then drop in a pan with roasted garlic, and teh herbs of your choice as long as its basil. The reach into the cabinet and grab the volka and pour a few ozs into the sauce. cook for a couple hours. Add a bit more basil and serve. If you're wanting meat in your sauce, I think they call them meatballs...............

Here is a good meat sauce that I use with a variety of pasta (my favorite being stuffed shells).
1 lb ground beef
1 lb hot Italian sausage (casing removed)
1/2 C Italian bread crumbs
1/2 olive oil
3 C chopped onion
8-10 (or more!) cloves fresh chopped garlic
2 1/2 C water
2 cans (1 lb. 12 oz. each) Italian tomatoes, undrained
9 oz. tomato paste
4 TBS chopped parley
2 tsp each dried basil leaves and dried oregano leaves
1 1/2 Tbs each sugar and salt
1/2 tsp pepper
Brown sausage and beef thoroughly in skillet, drain grease, add bread crumbs and set aside. In hot oil in 8 qt. pot, saute onion and garlic for 3 to 5 minutes. Mix in rest of ingredients, chopping tomatoes into smaller pieces as they cook. Bring to boil, reduce heat and add meat mixture to sauce. Simmer, covered, stirring occasionally for 1 1/2 hours.

Magic Fresh Tomato Spaghetti Sauce
This is a recipe for spaghetti sauce made from fresh tomatoes. I made a bunch of batches last fall and still have plenty in the freezer. It was particularly good for me because it was easy to make over two weeknights: do the first part one night, refrigerate, and finish the next night. Add cooked meat (or not) in the second half. A great recipe if you are a gardener.
