i LOVE to cook and bake, just not for one person...

i'm willing to share ancient family recipes

Whatever strikes your fancy; feel free to post!

Tonight, for example, I made some pretty good rice and beans as follows:

2 C H2O
2 TBS tomato paste
1 TBS veggie stock powder
1 TBS olive oil
1 tsp dried oregano
1 tsp cumin seeds
1/4 tsp salt
1/4 to 1/2 tsp red pepper flakes (more if ya like it hot, none if ya don't)
1 C basmati rice (or any long grain rice you prefer)
1/2 C coarsely chopped green olives
1 3/4 C cooked black beans or 1 15 ounce can of black beans
1/2 C scallion greens (or green onions)

Combine first 8 ingredients in a large saucepan and bring to boil. Stir in rice and olives and return to boil. Cover, reduce heat and simmer about 20 minutes.

Quickly scatter beans on over the rice. Cover and remove from heat, and let sit for a couple of minutes. Stir in scallions, distributing the beans as you fluff up the rice.

Two of my daughters have gone vegetarian on me, so I need to modify how I prepare things. For the above, I also might have some shredded chicken on the side, and my wife, my other daughter and I would add that to the rice and beans.

Eat out of a bowl, or roll it up in a tortilla with some cheese and hot sauce.
