OK..here we go. Discovered these looking for a christmas veggie idea. Peel parsnips (yup..those ugly white carrot thingies) and cut lengthwise like small french fries. Saute in olive oil or butter and sprinkle with salt and cinnamon. Tasty!

That sounds good! I also like em' just plain raw.

I'm waiting for the snow to melt so I can dig mine up!

I love them in stews in place of potatoes. They hold up better.

Parsnips and other root vegetables are great roasted util they caramelize.

I sure do! A bit of into here

Though I am not sure if you can do it everywhere...I may be near the farther north reaches of this practice. (Southern Wisconsin). But truthfully, this is the first time I've ever done this. I have been a gardener of sorts all my life, but only recently have a decent plot to call my own. So this is the first year I've grown parsnips. I do know people in my area who overwinter their parsnips. I was kind of hoping to just keep harvesting them through the winter, but when it snowed almost 20", I decided just to let them sit under the extra insulation. One key thing will be for me to dig them all up before they start to grow again, otherwise they get yucky.

Dug some parsnips up. They over wintered just fine. Fun to have something fresh from the garden this time of year. Made a big beef stew and also roasted some. Might even try making parsnip brownies.

I can almost smell that stew. I'm still amazed that root veggies don't freeze and get all mushy over winter.

The roasted parsnips were really kind of amazing. I keep thinking about them. I must roast more. :) They got crispy where they were on the pan, but the insides were very soft and smooth. Next time I will make sure to turn them properly so more of the outsides get crispy.

So I have some in the ground again this winter. I wonder how they will turn out after this bitter cold weather! Plus, I forgot to mulch them. I can only hope the snow layer is mulching them enough for me...

I made a big pot of beef stew monday afternoon. I cubed up a half of a rutabaga and threw that in. I just got done eating the other half. I cubed it and steamed it and lightly buttered them and then a little sea salt. Rutabagas take about 20 minutes to stem tender.

rutabagas, potatoes, carrots, kohl rabi, parsnips, radishes, onions, any root veggies are good. Roasted or raw.

I did this for the first time last year. They were pretty good, though kind of weird. Much more mellow than raw.

The snow did a great job! Ate some last week. Got to dig the rest up now, before they grow...
