I made a batch today to go with lunch and I have a bowl leftover.
2 c. diced pineapple (today I just used a can of crushed) 1 avocado, diced 1 jalapeno chili, chopped fine juice of 1 lime sprouts or cilantro for garnish (today I used a little parsley, but I like radish or alfafa sprouts, even bean sprouts work)
Combine all ingredients except garnish, puree half of mixture, combine with other half, serve chilled with garnish and salt.
I'm on a gazpacho roll and revisited this one today.
I just threw an avocado, a can of pineapple chunks (in 100% pineapple juice), a chopped jalapeno, and a chopped lime (peel and all) in the Vitamix we got a while back and ran it (had to add a little water) . It was very "zesty".
