Well, getting home after work tonight, I wasn't sure what to make. I had leftover chicken breasts and didn't just want to reheat. I have a favorite salad with wild rice, chicken, red grapes, onions, celery, toasted almonds and a mayo type dressing. However no wild rice in the house....hmmmm How about Quinoa! It worked great. Changed up the recipe. Quinoa, chicken, red grapes, kohlrabi, green onions, lemon balm and basil (from the garden) and a vinaigrette with dijon mustard, maple syrup, pear infused vinegar, olive oil, s and p. It was VERY good. I did forget the almonds, which would have been great.
That sounds good, sunnyday. I make a lot of impromptu salad meals like that from leftovers, just using whatever I have.
The other day, I decided to try something different with the chicken. I browned a couple of thighs in my cast iron dutch oven and then sautéed some onion, green pepper, and garlic. I added some tomato, some rice, some Spanish olives, some water, some paprika, salt, and pepper, and the thighs. I cooked it until the liquid was absorbed.
Most of my meals are impromptu. Yesterday I stopped at my parent’s house to give them some vegetable I had picked from my garden. My dad asked me if I remembered that they were storing 4 containers of stewed tomatoes in their freezer for me; I hadn’t. Only 3 of those containers fit in my freezer, so just last night I made a ragout with some meatballs, sausages, and left over beef roast.
