Since I retired in 2015, I have set an annual Challenge for myself. 2015 was a good one... Camp in a Tent Every Month of the Year. 2018 was Visit a Different Wilderness Each Month of the Year. 2021 - Make a recipe given to me by a friend every month.
This year will be: Make a New Fish Recipe Every Month of the Year.
I just put together a Deviled Walleye and slipped it into the oven... that won't count though, as I've made it before.

I'm spending a few months in Florida. Today I went fishing on the Gulf with a friend who took me out. I ended up with two White Grunt, three Mangrove Snapper, a Sheephead, and a Permit.
I'm looking for recipes for these now.
April's Recipe of the Month will still be Bluegill Enchiladas.

You ought to start a YouTube Fish Cooking channel.
Any ideas for a good walleye fish breading recipe either homemade ingredients or store bought pre-made packet? For some reason when I am up in Quetico the fish breading will fall off the walleye when I am frying in peanut oil at 375 degrees.
When I go canoe camping I don’t bring milk or egg to dip walleye filets in before I mix with breading. Some chefs use a tablespoon of corn starch with their flour and cornmeal breading. Not sure if corn starch will help with keeping breading stuck to the filet when frying?
Would appreciate your input on how to better keep breading stuck on filets when frying.

Ensure your filets are not wet when you put on crumbs or breading. Dry your filets by patting them with paper towels. Excess moisture will boil in the hot oil and take the crumbs right off the fish.
You need enough moisture for the crumbs to stick, but no more.
For battered fish, you will want to flour dust your filets to ensure they are dry. This will keep the batter from falling off.

I really want to recommend taking powdered milk and a few eggs for your fish fry while on a trip. Nothing beats a well-prepared dinner after a successful day of fishing and fileting! Once I learned how to fry fish in camp, my crew told me to keep it up and bring whatever I needed. Eggs, beer, cast iron pan, flour, etc. are all standard now.

I do bring OVA EASY eggs and NIDO Milk … maybe need to do a dip in a OVA EASY and NIDO Milk mix and then mix in ANDY’s breading and fry in Peanut Oil.
Keep your recommendations coming. LOL … nothing beats a walleye fish fry when canoeing up north.

Let the batter sit on the fish for a little bit, we have a bag we shake in so we leave it in that for about 5 minutes. Are you measuring with a thermometor? I just do the eye test but it really is key that the oil is hot enough and that you maintain the fire under the pan. Get sticks ready to control and move the pan if needed. We use cajun shore lunch for our mix.

A friend took me out fishing on the Gulf of Mexico. We caught some fish and I fileted them up. I used Sheepshead and White Grunt for this recipe, but I think any good eating fish would work well.

Looks delicious. I ate a lot of fresh trout stuffed with lemon, peppers, mushrooms, onion, even asparagus, while living in Colorado. Whatever fresh produce we had in the fridge was fair game. I only caught Rainbows and Browns (no Brookies or Lakers) and, eventually, came to the conclusion that I slightly favored the Brown Trout.

I agree! Since I haven't caught any Brown Trout in the past several years, I began working with what I had (Rainbows). Still like the Browns.

I used to be a bit of a Control Freak regarding menu planning, grocery shopping, and meal preparation as I really like to eat well on canoe trips. I've backed off on that a lot, and the rest of the group has stepped up in these areas.
Some of my menu items still make the trip, with a favorite being Quetico Skyline Chili. I am focused exclusively on fish preparation nowadays and my beer-battered fish fry in camp is a favorite. My crew thinks I could best Martha Stewart in a Saganagons Cooking Competition!
Yeah, we still eat well.
