      Holiday Jell-O Salad

3 oz. pkg. raspberry Jell-O
16 oz. can whole cranberry sauce
1/2 c. diced celery
1 med. apple, diced
1/2 c. chopped walnuts
8 oz. can crushed pineapple, drained and juice reserved
2 TBS lemon juice

Boil reserved juice and 1/2 c. water with 2 TBS lemon juice and add to the Jell-O. Break up the cranberry sauce and add. Refrigerate until it begins to set, add remaining ingredients and pour into mold. Refrigerate until set.

Holy flashback! My aunt Alice used to bring a very close version of this to Thanksgiving dinner each year.

I believe it, Marty - I was trying to recreate one Mom made! A blast from the past. Not exactly the same as Mom's - and not as good as Mom's! But still good - I'm making it to take to Dad's for a Christmas dinner next Saturday!

There were other ones, too, that she and my grandmother and aunts made. There was one that was lime jello with pineapple and cottage cheese, one was pineapple and carrots in some kind of Jell-O, besides the usual Jell-O with bananas or pears.

Any of those sound familiar?

My sister said it was really, really good!!! - and just like Mom's :)

Now to see if I can get a grandkid to eat it at Christmas ;)

One granddaughter ate it, but her mother (my daughter) didn't. Soon will see if the other granddaughter and grandson will eat it.

What about you? :) I ate it, my SIL ate it, but he eats anything anybody else cooks for him. ;)

I'm making another batch for the coming onslaught of other grandkids. Give it a try.

I made a variation of this based on this recipe . I followed cjmead's instructons - it was her recipe - and made a relish with a bag of cranberries, 2 apples, 2 oranges, both unpeeled, and 1 c. sugar. I used a cup and a half in the recipe and had quite a bit of relish left over, which was fine with me. The wife thought the relish a little tart, but was fine for me. You could add more sugar. She was OK with the molded salad though.
