Anybody else like mango salsa?

Made some yesterday for dinner with Shrimp and Black Beans.

Every time I make it, I think, "you know, you should make this more often", then it seems like forever before I do again.

Pretty simple - just mango, red bell pepper, jalapeno pepper, red onion (or green or white), a little olive oil, vinegar (white), salt, & pepper.

I’ve made various salsas over the years. I made a similar mango salsa once but it had some chopped jicama in it for added texture.

The jicama would be quite a textural contrast with the mango, Steve-O!
