Powdered eggs are boring! But, I have a lot of them... I have thought about mixing spices and other things like dehydrated veggies strait into the powder and cooking them like omlets. but I was wondering what others have done. I don't normally eat breakfast except on trips to keep my energy up. So I am looking for quick and easy.

I do the good ol "eggs in a bag". Ahead of time I measure out "3eggs" of powder, some dried onion (minced) from the grocery store spice section. On the trail, add water. I'll throw in some cheese, maybe some salsa, if i have some leftover summer sausage or spam, that goes in. Bring a pan of water to a boil and drop the bag in. Every now and then, pull it out and squeeze the eggs a bit to get the runny innards to the outside.
When done just right, it's like an omlet patty. I eat it out of the bag. Or, throw on a tortilla, add salsa and a bit more cheese and breakfast burrito! Either way, the best part is a hot breakfast with no dishes.
Powdered eggs go real well with Chicken Helper Chicken Fried Rice. I add less chicken and more egg.
When done just right, it's like an omlet patty. I eat it out of the bag. Or, throw on a tortilla, add salsa and a bit more cheese and breakfast burrito! Either way, the best part is a hot breakfast with no dishes.

We add in dehydrated red yellow and green peppers and also onion. Also add in some sausage crumbles at times. Put some salsa on it and pile it on a tortilla shell.

We do a similar dish with the addition of taco seasoning in the eggs before scrambling them. We also use O'Brien Potatoes instead of the straight peppers and onions and serve them in a flour tortilla as breakfast burrito. You could easily dehydrate the O'Brien potato mix and the salsa to save weight.

We use the good old reliable, Spam. It comes in single serving packets that contain 1 slice of this classic camping commodity. We dice it up and throw it in the mixture. It is just the right amount to include in scrambled eggs for two.

Ova Easy is a no brainer if you like eggs. I have had powdered eggs and they are awful. Ova Easy are hard to tell from real eggs. My daughter could not tell the difference in an omelet and was not very happy when I told her she was eating eggs in a can. They are expensive, but well worth it if you want good eggs in the field.

I do the same, and also add hot sauce and/or dehydrated salsa and dehydrated green peppers and cheese. I bring tortillas.
In the alternative, there is nothing better than the dehydrated Hungry Jack hash browns. Mix it all together in one pan and serve.
There are no strangers here, only friends who haven't yet met!
