For me, it's got to be non-stick. I'm not one to just bring boil-in-a-bag food. So it's a must.

While I have used many brands and materials I mostly settled on a SS or anodized aluminum 1 quart with lid, a pair of sierra cups 1 with a cut handle used inside the 1 quart to make an oven, SS laminated fry pan, Ti cutlery.

cheap small spatula I found somewhere.

This handles everything for two people. Have used for several years and never felt like more was needed. Could probably knock .5L off of the pot and be fine, but this particular pot nests great with the frybake. The mug is clear and marked in ounces/cups which is super helpful

Singular Toaks 1100ml pot with the lid. Lid acts as small pan, big enough for a fish fillet or two in some oil. That's it! Well, along with my Humangear spork.

Total weight 5-6oz.

One of my favorite cook kits over the years was a non-stick pot and pan I found at walmart 25 years ago. The took handles off both of them...pan nested under pot. Used a two dollar pot gripper. Made refletix coozie for the pot.

This year I am going all Fry-bake. With the fire ban, I am leaving my lodge carbon steel skillet and my stanley 3.5L pot. I love cooking fish in the skillet but I think the frybake expedition will do better on the stoves than a heavy pan with handle.

The frybake deep alpine heats enough water to fill up 3 coffees or 3 mountain house meals with one boil. And my goodness does water heat fast in those things.

My Stanley adventure pot doesn't work as well on stoves. That thick base requires heating up and boiling water in it really chews through the fuel. I usually just fill it with water and set it on the grate while the fire burns and always have hot water.

Anyway, I have 3 frybake pans and 3 stoves. I think frybake can handle all my cooking.

On the frybake site, they recommend their little spatula. I had one of those my grandmother gave me years ago and have used it extensively while camping. However, I discovered this little guy and now take 2 of these instead. They are awesome.

I take the hell's handle fish spatula also.

I use the solo pot that is a liter & a half or so as my bigger boiling pot for cold weather + sooty over fire use. This acts as the outer nesting container for a primus bowl & MSR titan, which is my primary pot for boiling water. MSR dragonfly & vertical part of windscreen fit inside MSR. I also carry a simple fairly thin walled cast steel fry pan & a Purcell Trench (which I’ve yet to use though I am looking forward to grilling whole-fish style with it soon).

I use a 6qt enamal pot and a 14 inch skillet for my group of 8. My pot weighs 1 1/2 pounds and the skillet weighs the same.

Whatever you use, don’t use any bare aluminum pan. If you want to know how much aluminum gets in your food or water, boil some water in the aluminum pot, let cool and taste it. It’s really really bad.

If I'm solo I just bring a single toaks 1.6 l titanium pot. I occasionally will bring a small fry pan as well especially if I want to fry some fish.

If I'm going with a group I will either take one or two larger titanium pots and a fry bake expedition or I might just take my GSI 10-in aluminum Dutch oven.

I think if I could only have one it would be the GSI anodized 10-in Dutch oven. It can do anything and everything you're just limited to one vessel at a given time.

I always pack 4 old kitchen towels to wrap pots and keep things warm off the stove. I also always bring a slotted spatula for frying fish.

Years ago we found a small nesting set of titanium pots. Super durable and lightweight. One of the best investments ever. Plus a frying pan for fish.

I have made adjustments to my system over the years. Titanium, for me, is too expensive and it's only good for boiling water. It is really bad for frying and sauteing and burns the food. I love dutch oven but even canoe camping not going to lug one of those. I now use two MSR Seagull pots. They are stainless steel, with lids, and they nest inside each other. MSR makes four sizes of these. #1 size fits into the #3 size pot.. And #2 size fits into the #4 size pot. My little butane stove fits inside the inside the smaller pot. Additionally I usually take a stainless fry pan. I like my Primus Campfire fry pan. Good heat distribution and not too heavy.
Well-designed heavy-duty folding handle. Many folks like the Pioneer fry pan from Self-Reliance Outfitters. For me, it's too small for doing fish, but it's a nice pan and also has a lid.

I don't like Teflon as it gradually chips or wears off and it's one of those forever chemicals. Not cool.

I also bring a pair of tongs and an inexpensive lightweight nylon-ish spatula.
Little spice kit made from a zippered CD case, using 35mm film canisters for the spices.

We now use a Trangia stove, and the pots need to fit this set up. We used the non-stick in past, which I cannot stand using. We just ordered Duossal (aluminum alloy exterior, stainless steel interior) pots from Trangia. Goodbye to the unhealthy, chipped/scratched "non-stick."

I usually take an old 10 inch cast iron skillet, one old aluminum pot of appropriate size for the group, and a perc coffee pot. Plates and/or bowls have varied a lot over the years - never really settled on a favorite.

I tend to eat dehydrated ’add boiling water’ meals & usually eat out of the bag to keep my primus bowl from getting dirty/needing to be cleaned. I’m solo & the MSR Titan is just about the perfect amount of water (12oz for food & remaining is just right for MSR Mugmate coffee in 16oz insulated metal mug). Those two with a dragonfly stove + a spoon will be fine for one who isn’t really cooking. I also carry a solo stove pot (~60oz) which my bowl, MSR pot, & dragonfly nest within. This pot is handy if hosting more than one (makes ~4 mugs of coffee instead of one) or if it is shoulder season/cold weather & I’m drinking more hot fluids.

In addition to the above, I carry a primus metal plate + a fork & a lightweight cast steel pan in case I decide to fry something (which happens so seldom that I carry steel wool to remove the rust) or if I get invited over for dinner I can bring my own plate + fork. I’m going to be turning in my stainless steel spoon/fork & get proper silver silverware for its anti microbial properties.

Gotta do fun stuff with food out there! It doesn't have to add much weight necessarily, there's a lot of creative stuff you can do.

I have a GSI set that has served for years, it nests together nicely.

However our group has grown recently and I'm needing to expand the set-up.

My wife bought me a Boundary Waters Journal fry pan for Father's Day (a little concerned with the comment above aluminum pans now) and I'll be getting a fry-bake before the next trip.

Group trips: 50 yo Sigg cook kit with 2 pots, Fry Bake pan, if there are a lot of coffee drinkers we will add a 3rd pot just for coffee, for all my accessories I carry a kitchen kit set (by GSI, I think) that has everything stowed in pockets (eating utensils, cutting board, serving utensils, paring knife, whisk, and more)

Solo trips: 750 mL titanium pot, mini pot grabber, soaking jar, spoon

teflon is a big NOPE for me...home or trail
